Ingredients

All-purpose flour      500 grams
Water                    250 grams
White sugar            10 grams
Salt                       ½ teaspoon
Evaporated milk       4 tablespoons
Eggs (no. 2)            1 egg
Butter                   2 tablespoons
Vegetable oil          50 grams

Directions for making Roti

  1. Mix evaporated milk, salt, white sugar, eggs and water together.
  2. Pour all-purpose flour into the mixer with the prepared liquid ingredients into the mixing bowl. Then use the hook to mix the flour until combined. When the dough starts to form and is well mixed, add 1 tablespoon of butter and continue to blend until the dough and butter are combined.
  3. After that, take out the dough and knead by hand for about 5 minutes until the dough is smooth. Then shape the dough into a large round ball and spread butter on top. Rest the dough in a covered container for about 30 minutes.
  4. After the dough has rested, cut the dough into 50-gram pieces. Then spread butter on the outside of the dough to prevent them from sticking together. Put all the dough pieces in a container to rest for another 1 hour before using.
  5. After resting the dough, press the dough flat and thin. Use both hands to support the edges of the dough to lift and slap the dough sheet to expand. Apply butter in the middle of the dough sheet. Then lift one corner of the dough up high to gather the dough sheet and fold it into a circle. Rest the dough for about 5 minutes before using your hands to press the dough again into a flat round sheet. Then, put it in a pan to fry. Add oil and butter to the pan to cook the dough and make it fragrant. Fry until the roti is yellow and cooked.
  6. Pat the fried roti to make it soft and fluffy.
