Directions for cooking the topping
- Use a mortar to pound coriander roots, garlic, peppers, shallots and dried chilies until finely pounded.
- Bring coconut milk to a boil, add the pounded ingredients and stir-fry until fragrant. Add the minced pork and minced shrimp and stir-fry until the pork and shrimp are cooked. Be careful not to let the ingredients clump together.
- Season with fish sauce, palm sugar, tamarind juice. Taste for saltiness, sweetness, and sourness as desire.
- Add crushed roasted peanuts, bring to a boil again, then turn off the heat.
- Scoop the mixture into a bowl, garnish with chili and coriander leaves. Serve alongside fried rice crackers
