Ingredients
Minced pork (less fat) 150 grams
Crushed roasted peanuts 70 grams
Chopped coriander root ½ teaspoon
Chopped Thai garlic 2 teaspoons
Ground pepper ½ teaspoon
Seasoning sauce 1 tablespoon
Salt 1 teaspoon
Coconut sugar 1 cup
Vegetable oil 2 teaspoons
Sri ra cha or Suan pheung pineapples ½ pineapple
Sliced red chili peppers ½ chilies

Directions for making Galloping horses appetizer
- Use a mortar to pound chopped coriander roots, garlic and ground pepper until finely ponded.
- Heat a pan over the stove, add vegetable oil, and stir-fry the mixture from step 1 until fragrant. Add the minced pork and stir-fry until cooked.
- Add crushed roasted peanuts and stir-fry to mix well.
- Season with seasoning sauce, salt and coconut sugar. Stir-fry over low heat until it can be shaped into balls. Rest it in a container and set aside.
- Cut the pineapples into ¼-inch thick slices, then cut into 2×2 cm pieces or use a cookie cutter to cut into various shapes as desire.
- Shape the filling into 1.5 cm balls or place it on top of the pineapple slice. Garnish each of them with sliced chili and coriander.
The food characteristics: The ingredients are different from tapioca ball filling (Sa Kuu), i.e. there is no pickled turnip or onion. Use 1-2 cups of coconut sugar, depending on the sourness of the pineapple. Decorate them with sliced chili and coriander
